Cooking ideas for a campervan road trip

In our campervan you can easily prepare almost anything. We provide you with big fridge to store your ingredients and two burner stove. Being on the campervan road trip doesn’t mean you have to eat only canned food and sandwiches. In this article you can find some tasty cooking ideas for campervan road trip which you can make easy and fast.

For vegetarian options, just don’t add meat in a recipe, it’ll be delicious too 🙂

Porridge

To make perfect Porridge  use a 2:1 ratio. That’s two parts fluid to one part oats. For Example for 1/2 cup oats put 1 cup liquid. Put oats in a saucepan, pour in milk or water and sprinkle in a pinch of salt. Bring to the boil and simmer for 4-5 minutes, stir continuously until it starts to thicken. To serve, pour into bowls and add your favorite toppings.

Here are some ideas: honey, Greek yogurt, dried or fresh fruit, nuts, chocolate, peanut butter – the options are endless.

 

 

Egg in a hole

Make a hole in a center of toast bread. Place bread in a greased pan. Break an egg into a hole in bread. Cook slowly until egg is set and bottom of bread is browned. If you like, turn over and cook top of egg. Season with salt and pepper. Serve with feta cheese and ham or bacon.

 

Omlette

Beat 2 eggs and add salt, pepper and some herbs. Pour the eggs into the heated pan and let it cook. Tilt the pan from time to time. On one side of your eggs, put grated cheese, ham (or bacon), mushrooms, olives and cream cheese (optional). Fold gently in half and slide onto a plate to serve. Put sour cream and fresh herbs on top (optional).

 

 

Pancakes

In a bowl put 1 cup flour, 2 tablespoon sugar, 2 teaspoons baking powder and pinch of salt. Make a hole in the center, and pour in 1 cup milk, 1 beaten egg and 2 tablespoons of oil. Mix to a smooth batter. Heat a lightly oiled pan over medium heat and pour the batter onto the pan until brown on both sides.

Idea for topping: Mix the peanut butter with the icing sugar, little bit of milk and chocolate chips. Spread the mix over pancakes and put banana on the top.

Sure you can add any of your favorite toppings like chocolate spread, fruit, jam,..

Breakfast tortilla

First make two scramble two eggs with a little bit of salt and pepper. Heat tortillas and put eggs, some grated cheese, beans, chopped tomatoes and lettuce, spicy salsa and optional some avocado or sour cream with sweet corn. Tortillas with chicken

Dice 400g chicken, season with salt, pepper, red paprika and cook until golden brown. In a pot over medium heat add half chopped onion with a little bit of olive oil and cook until onion is translucent. Add 2 red or yellow paprika and cook 6-8 minutes. Add diced fresh tomatoes, 1 can of beans, 1 can of sweet corn and a can of tomato sauce. Stir in cooked chicken and cook few more minutes over low heat . Season with salt, pepper and chili. Heat tortillas one at a time in a frying pan on high heat for 30 seconds each side. To serve, assemble the tortillas with shredded lettuce, chicken mixture, shredded cheese and roll.
Topping (optional): mix half cup sour cream, 1 tablespoon ketchup and 2 tablespoons mayonnaise.

 

 

Vegetable lentil soup

Cook chopped garlic (3 cloves) and small onion in a pot with little bit of olive oil until onion is is translucent. Put 1 cup of lentils and stir constantly for one minute (don’t let it burn). Add 2 cups of water, 2 carrots, 1 zucchini and 1 potato. Vegetable should be just covered so add more water if you have more veggies. Here you can add stock cube as well. Cover the pot and simmer for 5-10 minutes. Add 1 can of diced tomatoes, mushrooms and spinach or kale (optional). If you like, add pepper, celery , broccoli or some other vegetables. Try and add salt, pepper and seasoning of your choice. Serve with grilled bread.

This is great cooking idea for rainy and colder days.

 

 

Moroccan couscous

Stir 1 cup of couscous into the 2 cup of boiling water and cook until couscous absorbs all the water, 10 to 15 minutes. Heat 1 tablespoon olive oil in a pan over medium-low heat, then stir half chopped onion and 6 cloves garlic until onion is translucent. Put half cup raisins, half cup sun-dried or fresh tomatoes, and half cup almonds into onion-garlic mixture; cook and stir about 5 minutes. Shortly cook and stir couscous and onion-raising mixture, season with salt, pepper, herbs and (optional) chili, add 3 tablespoons of lemon juice and butter. If you like, serve this with grilled fish or chicken.

 

 

Quick bacon pasta

Cook 160g pasta according to packet minus 2 minutes. Heat 1 tablespoon of olive oil in a pan over high heat. Add 200g of bacon and cook for 1 minute, then add garlic (1 clove) and half onion and cook until onion is translucent and bacon is golden. Scoop out a mug of pasta cooking water and pour 1/2 cup into the pan. Bring to simmer and stir. Add can of diced tomato, bring to simmer and cook for 2 minutes, then turn down to medium. Drain pasta and put it into the pan. Toss gently and season with salt, pepper and pinch of sugar if it is sour. Add more of the pasta cooking water if it gets to thick. Serve with parmesan and parsley.

 

 

Croatian BBQ

In a supermarket or local butcher shop buy čevapčići and pljeskavica – traditional minced meat in Balkan. You can also prepare some chicken, sausages and grilled cheese for your BBQ. For side dish, we recommend grilled mushrooms, zucchinis and fresh seasonal salad. For more traditional taste, buy some Kaymak – creamy dairy product to eat with čevapčići and pljeskkavica and Ajvar – pepper-based condiment made principally from red bell peppers and oil. Ask us for grill (extra equipment), buy many beers and you are ready for the perfect evening! It is always good cooking idea for a campervan road trip to try some of traditional food!

Avocado tuna salad

Cut 1 large avocado, 2 large tomatoes, 1 cucumber, 1 paprika, half of a red onion and put in a large bowl. Add 1 can of chickpeas and canned tuna. Optional add boiled egg and olives.
For the dressing, in a separate bowl, whisk together ¼ cup olive oil, 2 tablespoons lemon juice, 1 teaspoon minced garlic, ¼ teaspoon salt and some fresh parsley.

 

 

Meat lover’s rice

Cut sausage in smaller pieces and cook it over medium heat 5-7 minutes or until no longer pink, drain and put back in the pot. Add one and a half cup water, 1 and a half cup rice, 1 diced carrot, 1 can of diced tomatoes, 1 red paprika and one 1 can beans, salt and pepper. Bring to a boil. When rice is almost done, cover, remove from heat and let stand 5 minutes. Stir in grated cheese, little bit of butter and add some herbs like basil and oregano.
